OBSERVATIONS AND CORRECTIVE ACTIONS

Violations cited in this report must be corrected within the time frames below.
*1 *There is no food safety manager certified by this Department (CFSM) on duty as required. A CFSM must be on duty at all times the facility is open and/or food is being prepared. Facility has 3 CFSMs registered with the County. Make sure that at least 1 is scheduled for every shift.  Repeat Violation.
*6 *Both food handlers on separate occasions attempted to serve customers by putting on gloves without washing hands first.
Food employees shall clean their hands and exposed portions of their arms as follows:
(1) Immediately before engaging in food preparation activities such as working with exposed food, working with clean equipment and utensils, and working with unwrapped single-service and single-use articles.
(2) After touching bare human body parts other than clean hands and clean, exposed portions of arms.
(3) After using the toilet room.
(4) After caring for or handling service animals or aquatic animals.
(5) After coughing, sneezing, using a handkerchief or disposable tissue, using tobacco, eating or drinking.
(6) After handling soiled equipment or utensils.
(7) During food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks.
(8) When switching between working with raw food and working with ready-to-eat food.
(9) Before donning gloves for working with food.
(10) After engaging in other activities that contaminate the hands.
Both employees disposed of the gloves they put on, and washed hands properly.

*8 There is evidence of food dumping in the serving station (front) hand washing sink.
A hand washing sink is for handwashing only, and serve no other purpose.
Must use prep sink for all foods.  Repeat Violation.
*14 *Several tongs are being stored above the sanitized compartment of the 3-bay sink, and some still contained food remnants. These items were removed from hanging and placed in the washing compartment to be rewashed.  Corrected On-Site.  New Violation.
*14 *Upon arrival, there was a cell phone charging right next to a cutting board and knife on the prep table.
Food and wares shall only contact surfaces of equipment and utensils that are cleaned and sanitized. Phone was relocated and prep table was sanitized.

37 The entrance to the walk-in cooler was blocked by several boxes being stored on the floor.
All items in the walk-in must be stored at least 6in off the floor to prevent contamination.  New Violation.
42 Facility is wet stacking its wares. All wares once cleaned and sanitized must be completely dry before being stored.  New Violation.
   
General Remarks
Notes:
*Compliance inspection will take place and fees could be assessed at that time.
*Facility does not have any test strips for the 3-bay sink. Replace.
*Facility has added a Botrista Machine to its menu. The machine mixes and serves various drink items including different flavors of lassi. This machine is NSF rated, but was not approved by department before installation. Always contact the Department before any installation of new equipment. This machine is out of service right now. The cleaning well of this machine contains heavy growth of pink and black mold - clean and sanitize before next use.
